All you need for this bread is a bowl and a few simple ingredients that you probably have around the house. No sugar, gluten-free, and a healthy, nutritiously moist banana bread.
Ingredients:
1 cup of mashed bananas (2 or 3 depending on the size)
3 eggs
1/2 cup nut butter (I used cashew & sunbutter)
1/4 cup coconut oil (melted)
1 tsp vanilla
1/2 cup coconut flour
1/2 tsp baking powder
1/2 tsp baking soda
1/4 tsp sea salt
1/3 cup cocoa nibs, goji berries, dried cranberries, seeds, or chocolate chips (or a mix of whatever you like)
How to:
Preheat the oven to 350 degrees F. Grease a loaf pan.
Mash bananas in a large bowl, add the eggs, nut butter, coconut oil, and vanilla until mixed well.
Add the coconut flour, baking soda & powder, as well as salt. Stir until well combined.
Fold in extras.
Put in the loaf pan and throw it in the oven.
Bake for 45 minutes or until a toothpick comes out clean.
Let it cool, slice, and store in a sealed container.
