Coconut Fig Power Bites

Ok, so these aren't just like fig newtons but they are pretty close. I liked fig newtons a lot when I was a kid. I googled fig newton ingredients and, oh boy, that list of high fructose corn syrup, highly processed, with too many artificial flavors to pronounce. Yeah, I'll pass on those.

Did you know the figs are full of fiber, boosts immunity, and are full of lots of vitamins and minerals? As well as containing antioxidants and aid in digestion, figs are also a great source of calcium.

Sunflower seeds (also in these bites) are full of lots of good stuff too, like zinc and B vitamins which help fight against stress. Who doesn't need that in this world we live in.  

Coconut Fig Power Bites

Ingredients:

  • 1 Medium-sized Banana 
  • 10 Dates dried
  • 7 Figs dried ( I used California Mission Figs)
  • 1 Tsp. Vanilla Extract
  • 1 Tbsp. Chia Seeds
  • 1 Tbsp. Flax Seeds
  • 1/4 Cup Shredded Coconut Unsweetened
  • 1/4 Cup Sunflower Seeds
  • 1/4 Cup Cashews Unsalted

Directions: 

Throw everything in a food processor until everything is mixed well. Unplug, before you stick a spoon in there. Make into balls, I made about 16 balls in my batch. Store in the fridge for about a week, if they last that long.
