This was a winner of a dinner in our house for those that enjoy spaghetti and lasagna.
1 package of pre-shredded zucchini noodles (it could have been 2)
1 onion diced
1 large can of whole tomatoes
1 package of large spicy sausages
Grated mozzarella cheese
Pre cook sausage in a pan until cooked all the way through. Cut into slices. Set aside. Add onions into the pan and saute, add zucchini after onions are slightly transparent. Add can of whole tomatoes, cut into chunks and simmer down with onions and zucchini for 7-10 minutes on medium heat. Add the spices to taste. Add the sausage and stir in til combined. Turn off heat. Put all heated ingredients into a casserole dish, top with grated mozzarella cheese and bake for 20 minutes on 350 degrees.
