Baked Zucchini Squash Casserole

This was a winner of a dinner in our house for those that enjoy spaghetti and lasagna.


  • 1 package of pre-shredded zucchini noodles (it could have been 2)
  • 1 onion, diced
  • 1 large can of whole or diced tomatoes, mostly drained
  • 1 package of large spicy sausages
  • Grated mozzarella cheese
  • Italian spices
  • salt
  • pepper


Precook sausage in a pan until cooked all the way through. Cut into slices. Set aside. Add onions into the pan and saute then add zucchini once the onions are slightly transparent. Add can of tomatoes, (cut whole tomatoes into chunks) and simmer down with onions and zucchini for 7-10 minutes on medium heat to thicken up. Add the spices to taste. Add the sausage and stir in until combined. Turn off heat. Put all heated ingredients into a casserole dish, top with grated mozzarella cheese (as much as you like) and bake for 20 minutes on 350 degrees.
