Avocado Brownie Muffins

These muffins are really moist and so delicious.

Who doesn't love a healthy chocolate muffin with a bit of protein, healthy fat, and oh so yum!

With only about 110 calories each, these gems were a keeper in my kitchen. Warmed in the toaster and slathered with some cashew butter, I devoured one in maybe two bites.

Ingredients:

Makes 12 Muffins

  • 1 scoop of chocolate protein powder
  • 2 Tbsp Pb2
  • 2 Tbsp Raw Honey 
  • 2 Tbsp Coconut butter, oil, or the original called for, ghee
  • 1/2 cup Almond Flour
  • 1 Avocado (medium-sized)
  • 1/4 cup Cocoa Powder (unsweetened)
  • 2 Eggs
  • 1/2 Tsp. Sea Salt
  • 1-1/2 Tbsp Special Dark Chocolate Chips 
  • 1 Tsp. Vanilla Extract
  • 1 Tsp. Baking Soda

Blend all ingredients together, except the chocolate chips, in a food processor until creamy. Add chips and stir in. Divide mixture evenly among the muffin pan. Sprinkle with additional chips if desired. Cook for 17-20 minutes in 350 degree oven.    

You can add more sweetener if you like. The original recipe called for a half a cup of coconut sugar so please add how much you prefer. Maple Syrup might add a tasty flavor too. This was inspired by this beautiful, lovely fellow blogger gal @ thetoastedpinenut.com

Also, the original recipe called for 1/2 cup cocoa powder and I decided to add in some PB2 instead. But this is optional, just do 1/2 cup cocoa powder instead.
