Nut Butter Apple Muffins

I make double batches of everything since I have a house of hungry people.

These apple muffins are quick and easy. This recipe makes 12 full size muffins.

Throw all ingredients (except the apple) in a food processor or blender.

Ingredients:

  • 1 cup unsweetened applesauce
  • 1 cup sunbutter
  • 2 eggs
  • 1/2 tsp. baking soda
  • 6 tbsp. maple syrup
  • 2 tbsp. pure vanilla extract
  • 1/2 tsp. salt
  • 2 tsp. cinnamon
  • 1 tsp. ground ginger
  • 1/4 tsp. ground cloves

Chop a medium to large apple

Preheat oven to 400 degrees. I used a silicone heart shaped muffin pan, sprayed olive oil cooking spray. Blend all ingredients in a food processor and then stir in chopped apple. Bake for 12-14 minutes for full-size muffins. Let them cool slightly before taking them out. Enjoy for breakfast!
