Avocado Basil Garlic-Scape Pesto

I went to Aldi the other day to do some grocery shopping and my boyfriend found the best deal in the whole store. He's the deal finder, I call him, and he was more excited about the $.25 avocados than I was. I mean I do love a good deal. I was just gonna purchase a couple but the frugaholic thought I should buy out the store.

I only bought a few avocados and decided to get creative with some recipes like this one I found. I often put my own twist on recipes I find.    

Avocado Basil Garlic-Scape Pesto

Makes 1 cup

2 Avocados, large ripe

1 Cup Basil, packed fresh leaves

1/2 Cup Swiss Chard

3 Garlic Scapes, chopped, just the tender part

2 Tbsp Sunflower Seeds 

2 Tbsp Nutritional Yeast 

1 Tbsp Lime juice, fresh squeezed

1 Tbsp Lemon juice, fresh

3 Tbsp Water


Throw all the ingredients in a food processor and blend until the pesto is nice and creamy. Add more water if needed. 

Store in an airtight container in the fridge.

Serve on toast, toss with zoodles, cook with stir-fries, bake with chicken, or just get creative.
