I've been craving thai food and decided to try creating some kind of curry dish. I looked for inspiration and found it. I tweaked the recipe a bit, as I usually do. And it turned out pretty darn good. I used ground beef but you could use chicken or shrimp too. You could even add other vegetables if you like.
What you need:
- 1 tbsp of olive oil
- 1 tbsp curry powder
- 1 clove of garlic, chopped
- 1 tbsp tomato paste
- 1 bell pepper, chopped
- 1 lb. lean ground beef
- 1/4 cup canned pumpkin
- 1/2 can unsweetened coconut milk
- 1 chopped zucchini
How to:
Heat the oil over medium-high heat. Sprinkle in the curry powder, stirring often.
Add in the chopped garlic, tomato paste, and chopped bell pepper. Saute until the peppers are softening.
Add in the meat, or any other protein of choice, until cooked.
Throw in the zucchini chunks and stir.
Pour in the coconut milk and add the pumpkin. Cover and cook, stirring occasionally, for about 25 - 30 minutes.
Serve over rice or quinoa, even riced cauliflower would be good. Enjoy!
