Cherry Pecan Pie No-Bake Bites

These bites are super simple to make. I was looking at my recipes for ideas to make while doing some food prep this past week and figured I would experiment. These gems came out of it and they are so tasty and healthy. Healthy fats from the nuts and coconut, fiber from the flaxseed meal and prunes, and just the right amount of yum to keep me wanting to eat the whole batch in one sitting. The cherries also add some antioxidants as well as some nice color in these little bites. You could also switch up the nuts to whatever you have on hand or the prunes could be swapped for dates, raisins, or dried cranberries, or cherries. Play around and see what you come up with. You can also leave the honey out or swap it for maple syrup. Do whatever makes your heart happy with this recipe!   

 

Cherry Pecan Pie No-Bake Bites

Ingredients:

  • 1/4 cup flax seed meal
  • 1/2 tbsp. raw honey
  • 10 dark sweet cherries (mine were frozen)
  • 1/4 cup unsweetened shredded coconut
  • 1/2 cup roasted unsalted cashews
  • 1/2 cup pecan halves
  • 5 dried prunes 
  • 1/2 tsp. vanilla extract

Directions:

Gather all ingredients and throw in a food processor. Chop until well combined. Make into bite-sized balls. Store in an airtight container in the fridge. 

(Makes about 13 bites, depending on the size you want)
